We’ve launched our Moroccan culinary food tours for you to sample and explore the best of the region’s essential ingredients and get the lowdown on the raw materials. The highlights are our Moroccan cookery classes.
Port of Essaouira
Very much a working port this the real deal for fish. We start our Moroccan culinary food tour here sourcing fish if that’s on the menu for the day’s later cooking classes – you choose! All kinds are landed here from sardines to shark and it’s pretty damm fresh. For the Essaouira speciality kefta sardines you need the right catch and local people know what to look for. It’s all to do with the weather.
Medina of Essaouira
A ‘souk’ is a market and within a medina and you’ll find many markets in Essaouira each selling a different kind of food. So when shopping for any typical Moroccan dish locals will source from different sellers and as part of your culinary food tour of the medina you’ll join Naima as she guides you through local customs, what she looks for in ingredients and how to steer around other shoppers!
Spice market
All things Spice. Your culinary tour of the medina wouldn’t be complete without a spice masterclass. We have Khalid on board to run through all the mixes, natural dyes, teas, scents. Enjoy a tea Royal and sit back to enjoy his tales from the souk. You should take the saffron test as Ross Golden-Bannon did in January whilst out on a tour with us.
Country markets
The region around Essaouira is home to several country markets each on a different day of the week. They are in complete contrast to the medina souks, offering a friendly location to observe the weekly shop for essentials. Donkeys are the main mode of transport for villagers heading in from their hamlets to buy their goods. Fruit, vegetables, meat, household items, cobblers, spices…the list is endless. A culinary tour is not complete without a trip to one of these.
Cooking classes
We run these in our kitchen is part of our country home which is set in an olive grove situated in quiet village 15 mins from Essaouira. You’ll choose the menu with Naima from a selection of meat tagines with fruit, filo encased Pastilla & briouats, lemon chicken, soups, zaalouk or Moroccan patisseries. We also cater for vegetarians.
